Chef de Partie - Rabat Marriott Hotel

About the role

The Chef de Partie at the Rabat Marriott Hotel prepares and cooks food according to recipes, quality standards, presentation standards and a food preparation checklist. The role also covers kitchen organisation, communication with the Chef and Food & Beverage staff, and supporting the team.

Key responsibilities

• Prepare special meals or substitute items and prepare cold foods.
• Regulate the temperature of ovens, broilers, grills and roasters, and pull food from freezer storage to thaw in the refrigerator.
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared.
• Maintain food logs and inform the Chef of excess food items for daily specials.
• Tell Food & Beverage service staff about menu specials and out-of-stock items.
• Anticipate and address guests' service needs and communicate assistance needed during busy periods.
• Assist management in hiring, training, scheduling, evaluating, counselling, disciplining and motivating employees, and act as a role model.
• Follow company, safety and security policies, report accidents and unsafe conditions, complete safety training and certifications, and keep proprietary information confidential.
• Stand, sit or walk for long periods, lift up to 25 pounds, and perform other reasonable duties requested by supervisors.

Required profile

• Preferred: technical, trade or vocational school degree.
• Preferred: at least 3 years of related work experience.
• No supervisory experience required.
• No license or certification required.
