Baker (Shipboard)

About the role

This is a shipboard Baker position responsible for the daily operation and production of the bakery shop and its bread assortment. The role works under the guidance of the Head Baker and the Executive Chef, on a ship where food safety inspections and strict cost control are required.

Key responsibilities

• Ensure the smooth and efficient operation of the bakery shop and its production each day according to company policies.
• Be responsible for the production, quality and presentation of the bread used in the daily menus.
• Assist the Head Baker in preparing production forecasts and recording leftovers to avoid waste and keep food costs within budget.
• Help set up the bread displays in the various buffets.
• Know the United States Public Health rules and regulations and make sure they are followed every day.
• Keep the bakery clean according to the Executive Chef's schedule, using proper methods to minimise damage to equipment.
• Make sure the bakery is ready for announced or unannounced USPH inspections by the ship's management or inspectors.
• Requisition and transport items from the main stores to the bakery when assigned.
• Check that recipes and yields meet company standards.
• Assist the CDP Baker with the daily consumption recap required by the Executive Chef.
• Be able to answer questions from guests and crew about the ship's standard operations.
• Attend meetings, training and other work-related activities as required, and perform other duties assigned by the supervisor or management.

Required profile

• At least three years of experience as a Baker in an upscale hotel, resort, cruise ship or banquet service; shipboard experience preferred.
• High school or equivalent education.

Required skills

• Knowledge of proper cleaning techniques, requirements and equipment use.
• Knowledge of United States Public Health rules and regulations.
