Head Chef – Italian Fine Dining

About the role

We are seeking an experienced Italian Chef de Cuisine to lead the kitchen of a well‑established Northern Italian restaurant in the heart of Casablanca. The restaurant offers classic Milanese and Venetian dishes, house‑made fresh pasta and a Neapolitan pizza oven, aiming to become the city’s reference for authentic Italian dining.

Key responsibilities

• Full responsibility for kitchen operations, including menu execution, quality, consistency, food cost control and team management.
• Train and lead a local brigade of 13 staff to international standards.
• Maintain product sourcing and supplier relationships, especially for imported Italian produce.
• Collaborate with the owner on seasonal menus and specials.
• Be present and visible in the dining room when needed.

Required profile

• Italian national, trained in Italy with a background in classic Italian cuisine at a high‑level establishment.
• Experience as Chef de Cuisine or a strong Sous Chef ready for promotion.
• Calm, organised, exacting and patient to build and coach a team.
• Comfortable living and working in Morocco; French language skills are a plus.
• Available to relocate within the coming months.
