Restaurant Director – New Opening (Rabat, Morocco)

About the role

We are seeking a Restaurant Director to lead the launch of a new contemporary Italian‑Moroccan restaurant in the Rabat area. The project is backed by a leading Moroccan business group and includes a clear expansion plan for future growth.

Key responsibilities

• Oversee operational management and service supervision for the new venue.
• Monitor KPIs, food cost, labour cost and overall financial performance.
• Manage, train and develop a team of approximately 20‑25 staff members.
• Ensure high standards of customer experience and service quality.
• Drive business development initiatives and achieve set targets.
• Collaborate closely with the senior management team on project evolution.

Required profile

• Solid experience managing structured restaurants, restaurant chains or organized food & beverage groups.
• Strong business and profitability mindset.
• Excellent leadership skills with the ability to engage and motivate teams.
• Entrepreneurial approach and strong results orientation.
• International experience is a significant plus; prior experience in Morocco, the Middle East or other international markets is highly valued.

What we offer

• Net salary of €2,300‑€2,700 per month plus housing allowance.
• Permanent contract.
