About the role
We are seeking an experienced Shipboard Butcher to join our galley team on a cruise vessel. The successful candidate will be responsible for preparing high‑quality meats and poultry for guests and crew, while ensuring strict compliance with food safety standards.
Key responsibilities
- Thaw, cut, and prepare meats and poultry according to the culinary schedule set by the Head Butcher and Executive Chef.
- Follow FIFO (first‑in‑first‑out) stock rotation procedures and store received products in freezers on loading days.
- Transport food items between preparation areas and the galley as needed.
- Maintain a clean and sanitized work area and utensils in line with United States Public Health (USPH) regulations.
- Be on standby for USPH inspections and attend all required meetings, training sessions, and related activities.
- Perform any additional duties assigned by supervisors or management.
Required profile
- Minimum three years of butcher experience in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
- High school diploma or equivalent.
Required skills
- Meat cutting and butchering techniques.
- FIFO stock management.
- Food safety and USPH compliance.
- Cleaning and sanitizing procedures for food‑service environments.
