Confectioner – Pastry Chef

About the role

We are seeking a skilled Confectioner to join our culinary team, delivering high‑quality pastry items across all meal periods and ensuring guest satisfaction. The role reports to the Executive Chef, Executive Sous Chef and Pastry Chef and may supervise assistant pastry chefs.

Key responsibilities

• Prepare and deliver premium pastry items for breakfast, lunch, tea time and dinner.
• Collaborate with the pastry team to produce desserts, pastries and petit fours.
• Supervise pastry operations during service and act on behalf of the Pastry Chef when required.
• Oversee buffet setups, service stations and presentation plates.
• Coordinate special orders, events and functions, planning production based on guest counts.
• Maintain food storage, quality control and waste prevention in line with public health standards.
• Monitor guest allergies and dietary restrictions, ensuring safe service.
• Assist with inventory control, equipment audits and preventive maintenance.
• Ensure compliance with food safety, sanitation and public health regulations, including temperature monitoring.

Required profile

• Valid STCW95 certification.
• Minimum 4 years of experience in a similar role at an international 5‑star establishment.
• Good knowledge of international cuisine.
• Familiarity with public health policies and procedures.
• Ability to read, interpret and apply culinary fundamentals.
• Physically and medically fit.
• Fluent English (verbal and written).
