Demi Chef de Partie

About the role

The Demi Chef de Partie at the Rabat Marriott Hotel prepares special meals and substitutes, cooks according to recipes and quality standards, and supports the kitchen team. The role also involves assisting management with hiring, training and scheduling, and following safety and security policies.

Key responsibilities

• Prepare special meals or substitute items and prepare cold foods
• Regulate the temperature of ovens, broilers, grills and roasters, and pull food from freezer storage to thaw in the refrigerator
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared
• Maintain food logs and inform the Chef of excess food items for daily specials
• Tell Food & Beverage service staff about menu specials and out-of-stock items
• Anticipate guest service needs and communicate assistance needed during busy periods
• Assist management with hiring, training, scheduling, evaluating, counseling, disciplining and motivating staff, and act as a role model
• Follow company and safety policies, report accidents and unsafe conditions, complete safety training and certifications, and keep proprietary information confidential
• Stand, sit or walk for long periods and lift objects up to 25 pounds

Required profile

• Preferred: technical, trade or vocational school degree
• Preferred: at least 3 years of related work experience
• No supervisory experience required
• No license or certification required
