Head Baker – Luxury Cruise Line

About the role

The Head Baker at Silversea Cruises leads the onboard bakery operation, delivering artisan breads, viennoiserie and specialty dietary products to premium dining venues. Reporting to the Pastry Chef and Executive Chef, this senior position ensures consistent, high‑quality output that enhances the guest experience at sea.

Key responsibilities

• Oversee daily production of breads, pastries and bakery items across all venues, including special events.
• Create artisan products such as sourdough, laminated pastries, gluten‑free and regionally inspired specialties.
• Collaborate with culinary leadership to develop and adapt bakery offerings while adhering to company standards.
• Maintain strict sanitation and safety compliance with USPH, HACCP and maritime regulations.
• Manage inventory, control portions and reduce waste through effective planning.
• Train, supervise and mentor bakery staff, fostering professional growth.
• Engage with guests during culinary events and demonstrations.

Required profile

• Valid STCW95 certification and proven experience as Head Baker or Senior Baker in a luxury hotel, Michelin‑starred restaurant or cruise line.
• Advanced knowledge of artisanal bread baking, laminated doughs and modern dietary alternatives.
• Culinary degree or equivalent certification preferred; cruise ship or international hospitality experience is a strong advantage.
• Physically and medically fit with high moral integrity.

Required skills

• In‑depth understanding of USPH, ILO, ISO and HACCP standards.
• Proficiency with Microsoft Office applications.
• Working knowledge of Fidelio and MXP hospitality systems.
