Director of Food & Beverage Operations

About the role

The Director of Food & Beverage Operations will lead all F&B activities at our property in Taghazout Bay, including culinary outlets, restaurants, bars, room service and banquets. Reporting to senior hotel management, you will shape and execute the department’s strategy to meet brand standards, drive revenue and ensure guest satisfaction.

Key responsibilities

• Develop and implement a food and beverage operating strategy aligned with the brand’s business goals.
• Oversee daily shift operations, ensuring compliance with policies, standards and service procedures.
• Manage staffing levels, recruitment and training to meet guest service and financial objectives.
• Control purchasing, equipment acquisition and supply ordering while maintaining cost efficiency.
• Lead monthly self‑inspection programs and enforce cash and liquor control policies.
• Prepare and analyse financial reports, set budgets, monitor sales performance and recommend capital investments.
• Set performance targets for the F&B team and drive continuous improvement initiatives.

Required profile

• High school diploma or GED with at least 6 years of progressive experience in food & beverage, culinary or event management, OR a 2‑year degree in Hospitality/Hotel Management with 4 years of relevant experience.
• Proven ability to manage large‑scale F&B operations and lead multidisciplinary teams.
• Strong financial acumen with experience budgeting, forecasting and profit‑margin management.
• Excellent communication skills and a customer‑focused mindset.
